Dubai’s fine dining scene continues to raise the bar, and the Smoked Room, a Michelin-starred gem, is one of the latest additions to the city’s culinary landscape. With its exclusive atmosphere, innovative cooking techniques, and carefully curated tasting menus, Smoked Room promises a dining experience unlike any other. Here’s a deep dive into what you can expect when dining at this prestigious restaurant, located in the stunning St. Regis Gardens on Palm Jumeirah.
A Hidden Gem with a Speakeasy Vibe
Walking into Smoked Room feels like entering a secret hideaway. The entrance, which exudes a James Bond-esque aura, is discreet and understated, with walls the color and texture of charcoal. Once inside, the restaurant reveals its true character: a small, intimate space designed to seat just 14 guests. The ambiance is moody and atmospheric, with a strong focus on fire and smoke—quite literally, as the restaurant’s name suggests.
The design of the room feels like a mini-maze, leading to the crescent-shaped dining table where guests sit facing the live kitchen. Above the chefs, a row of mirrors allows diners to watch the cooking process, giving the experience a theatrical touch. With smoking cabinets filled with meat and fish, the scent of smoked fare fills the air, further enhancing the immersive dining experience.
What’s on the Menu at Smoked Room?
Smoked Room’s tasting menus—Kosei no Hi (Dh600 for 10 courses) and Matsuri (Dh950 for 12 to 14 courses)—are a journey through fire and smoke, showcasing an eclectic range of ingredients. Though the menu is inspired by Japanese cuisine, the focus is not limited to any one style. The chefs at Smoked Room masterfully combine smoking techniques with live-fire cooking to elevate the flavors of seafood, poultry, and meats.
I had the pleasure of experiencing the Kosei no Hi menu, which, though currently unavailable, offers a beautifully crafted sequence of dishes. While the Matsuri menu is the one on offer at present, both provide a perfect opportunity to indulge in unique flavors and textures.
A Look at the Standout Dishes
The meal begins with a delightful starter—triple-fermented brioche rolls served with red miso butter, prepared right at the table. This rich, indulgent bread with savory miso butter offers an immediate introduction to the bold flavors to come.
The first course of Amaebi from Hokkaido, served with brown butter, smoked black pepper, and fresh yuzu, is a sweet, smoky delight. The combination of flavors—from the silky shrimp to the fiery kick from the peppercorns—is balanced perfectly by the citrusy touch of yuzu.
One of the standout dishes of the evening was Sturgeon Nitro Tomato, a signature creation by Chef Garcia. The dish features creamy smoked sturgeon mousse, paired with caviar and almond pearls, and topped with a horseradish soup. This unique dish combines molecular gastronomy with traditional cooking styles, offering an explosion of complex flavors in every bite.
As the meal progresses, the courses evolve from light, delicate flavors to richer, heartier ones. A palate cleanser of tomato snow with smoked mackerel and chipotle refreshes the taste buds, and the dish’s unusual combination of icy tomatoes and smoky fish creates an intriguing contrast.
For the warm dishes, the charbroiled hokkigai clam was a highlight, served with creamy beurre blanc and fresh wasabi. This giant clam, delivering up to 400 grams of meat, was a new and exciting experience. The dish is rich but balanced, with creamy ingredients and a hint of heat from the wasabi.
Decadent Meat Dishes
The meat dishes are where Smoked Room truly shines. The dry-aged duck with black mole and corn risotto is a showstopper. The crispy fat on the duck is a revelation, delivering a savory richness that is perfectly complemented by the mole and risotto. If you’re a fan of duck, this is a must-try dish.
Next comes the indulgent duck, foie gras, and mushroom croquette, a single bite that melds the richness of foie gras with duck and mushrooms. Despite being fried, the croquette maintains a delicate, pillowy texture that’s impossible to resist. This dish is so satisfying that it’s hard to believe it’s just one bite!
A Speakeasy Dessert Room
To wrap up the meal, guests are taken to the speakeasy-style dessert room, where the atmosphere shifts to a more intimate setting. The first dessert, roasted butternut squash puree with mandarin sorbet and caramelized pumpkin seeds, is a wonderful mix of textures and temperatures. The puree is savory, not too sweet, and pairs perfectly with the tangy sorbet.
The meal concludes with a decadent chocolate dessert: dark chocolate shards layered on miso and whiskey gel, presented in the shape of a fire. This rich, smoky dish ties back to the restaurant’s theme, providing a memorable finish to an extraordinary culinary experience.
Key Details About Smoked Room
Smoked Room operates with two seatings each night at 6:00 PM and 9:00 PM, from Tuesday to Saturday. The set-menu experience lasts approximately 2 to 3 hours, giving guests plenty of time to savor each course. With only 14 seats available, reservations are a must.
